After some experimenting with my diet, wheat flour is OUT and coconut flour is IN. For me, it seems soy is okay, but dairy and gluten are a big NOPE. Last night I had some of my son’s gelato and by the next morning I had broken out in hives/eczema. Again.

Chocolate chip cookies, that’s how. Today I experimented a bit more with no gluten / no dairy / no soy cooking and after a lot of cookie recipes that looked ‘meh’ I landed on one that had pictures of cookies that LOOKED like real cookies. Well, if they look good, they must taste good, right?
Recipes like this are easy to experiment with because I’ve slowly converted a section of my pantry to baking and cooking staples that are safe for me to eat. The great thing is, my husband grabbed a cookie and ate it without (initially) questioning me on what it was made with. That means they 1) looked like “real” chocolate chip cookies and 2) tasted like “real” chocolate chip cookies that I just experimented with additional flavors with. Not sure if they will pass the kid-test yet or not.

The chocolate chip cookies are soft and have a faint taste of coconut (I’m not mad at that at ALL.) I did try to get the cookies a bit crisp by using the convection setting on my oven, but it didn’t help. I’ve seen some suggestions of adding more baking soda or possibly a bit of coconut oil to crisp things up. If you make this recipe and find a way to bake them with a bit more crunch please let me know!
If you go straight from traditional chocolate chip cookies to this, well, you are going to hate me. But, if you cut out all wheat flour for a month and THEN eat this, you will experience angels on your shoulders singing.
